Kenyan Beef Stew Recipe
Ingredients
2 lbs beef, cut into bite sizes
1 cup of water
4 tablespoons olive oil
1 big red onion or 2 small ones, diced
5 garlic cloves, minced
1 inch fresh ginger, minced
3-4 fresh tomatoes, diced
1 teaspoon tomato paste
2 carrots, diced
5 small potatoes, diced
3 Bay leaf
2 tbsp Kenya Mama’s Kitchen All Purpose African Seasoning Blend
Salt and fresh ground pepper to taste
Fresh coriander for garnishing
Instructions

In a saucepan, place the meat, ginger, garlic, Kenya Mama’s All-Purpose Seasoning, and 1 cup of water. Boil the meat for about 30 minutes over medium heat.

Separate the meat from the broth and set both aside (you’ll need the broth later for the stew).

In a separate saucepan, heat the vegetable oil over medium heat. Fry the onions until soft.

Add the beef and fry until it starts to brown.

Add the tomatoes and tomato paste. Cook until the fresh tomatoes have softened.

Add the curry powder, paprika, and a little extra Kenya Mama’s All-Purpose Seasoning if desired. Mix well and let the mixture simmer for a minute or two so the spices blend with the beef.

Add the carrots and potatoes. Stir well and let it simmer for about five minutes, stirring every minute to prevent sticking.

Once everything is well mixed, add the broth you set aside earlier.

Stir well and add the bay leaves. Lower the heat to low and simmer for about 45 minutes, or until the meat is tender, stirring occasionally.

Season with salt and pepper to taste.

Garnish with fresh coriander and serve hot with rice, ugali, or chapati.
